Easy-to-prepare summer recipes

In summer, we eat a lot of fruits and vegetables bought on the market or, for the lucky ones, harvested in the vegetable patch. As it is hot, we have a little less appetite and we do not necessarily want to spend hours in the kitchen, so we prefer entrees, light dishes and quick to prepare. Here are some easy summer recipe ideas to change from the eternal pasta or rice salad!

Cold soups and veloutés

Cream of pea or asparagus soup, tomato or beetroot gazpacho, nettle and mint soup, courgette and garlic cheese soup,… cold soup or cream soup, in addition to cooling and hydrating, is a healthy and slimming recipe. The possibilities are endless, you just have to spice up the soup or the velouté with some aromatic herbs (coriander, mint, basil, chives, etc.), spices and a drizzle of olive oil. The more gourmet can add stracciatella, crème fraîche, whipped cream with fresh cheese or mascarpone.

For a refreshing starter, opt for soup or cold soup
